Smarty-Pants Pasta

When you pack your own lunch you know what's exactly is going into it - and that's the smart part.

Here's a pasta salad recipe that is quick, easy and delicious. When you get to school, you'll have something really special for lunch.

Makes 6 servings

You'll need:

  • A 16 ounce package of colored rotini
  • 1 tablespoon of honey
  • 2 teaspoons of Dijon mustard
  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • Fresh ground pepper
  • 1 small can of olives - sliced
  • 1/4 cup red onion - minced
  • 1 medium red pepper - chopped
    A 6 oz. package of herbed feta cheese
  • Some adult help

Equipment:

  • Measuring cups and spoons
  • A glass measuring cup
  • A large bowl
  • A colander
  • A large spoon
  • A pancake turner
  • A serving plate
  1. Cook the pasta according to the directions on the package. Drain and let cool.
  2. Meanwhile, put the oil, vinegar, honey, mustard and pepper into the glass measuring cup. Whisk together and you've made the dressing. Set the dressing aside for the moment.
    In the large bowl, combine pasta, olives, peppers, and onion.
  3. Crumble the cheese into the bowl.
  4. Pour the dressing over the pasta and toss until well mixed.
  5. Refrigerate until you're ready to pack your lunch.
