Tangy Tomato Dip

This dip is so quick and yummy! Paired with raw veggies, it's a great way to get some vitamins on a cloudy, snowy day, 'cause you're not getting any Vitamin D from the sun when you're bundled up in all those clothes!

If these last weeks of winter are getting you down, check Magical Cures for Cabin Fever http://www.parents-choice.org/news_portal.cfm at the Parent's Choice Foundation.

Makes 1 1/2 cups of dip

You'll need

  • 1 stalk of celery
  • 1/2 cup of your favorite creamy dressing
  • 1 bag of sundried tomatoes
  • Raw veggies like pea pods, carrots, sweet pepper strips, jicama sticks
  • A little adult help

Equipment:

  • A glass measuring cup
  • A food processor
  • A spatula
  • A small bowl
  • A large plate
  1. Wash the celery and trim off the top and bottom of the stalk. Cut into 1 inch pieces.
  2. Put the celery and the creamy dressing in the blender and process until the celery is in tiny chunks.
  3. Now add the tomatoes. Process in short blasts until the tomatoes start to make a thick, chunky dip.
  4. Ask for help emptying the processor because the blade is wickedly sharp!
  5. Put the dip a small bowl. Place the bowl on the plate and surround with crisp, colorful veggies.
  6. Use the veggies as scoop shovels and dig in!
