Hearts of Palm Salad

The heart of palm is the tender new leaves that sprout at the top of the tree. We always wonder about food items like this. Someone must have been awful hungry to climb way up to the top of the tree.

The hearts of palm that come in the can are packed in brine so they are a little salty, a little sweet and have a wonderful creamy, crunchy texture.

Makes 6 salads

You'll need

  • 1 bag of pre-washed baby or spring greens
  • 1 can of hearts of palm
  • 1 small jar of roasted red peppers
  • 1/2 white onion
  • Your favorite salad dressing
  • A little adult help

Equipment:

  • A sharp knife
  • Individual plates for serving
  1. Spread greens out on the plates.
  2. Slice the hearts of palm into rounds about 1/3 inch thick.
  3. Slice the red pepper into 1/4 inch by 1 inch strips.
  4. Slice the onion very thinly, so you can almost see through it. You might want to ask for help with this.
  5. Arrange the hearts of palm, onion and red pepper on the greens.
  6. Serve with your favorite dressing. Quite a treat!
