Quick and easy, this fresh, light salad is a dish both our vegetarian
friends and our non-vegetarian friends love. Ginger gives this
salad a zippy flavor.
Fresh ginger is sold in "hands," because when ginger
grows it often looks like fingers branching off a chubby palm.
You'll need:
1 block of extra firm tofu
A 3-inch long piece of fresh ginger
2 green onions - thinly sliced
2 tablespoons of soy sauce.
Utensils:
A butter knife
A grater
A sharp knife
An adult to use the sharp knife
Ask your Aunt or whoever is cooking with you to slice the
green onions across so that they are little green and white
rounds.
Ask your Aunt to peel the skin off the piece of ginger. Grating
ginger can be really hard and the grater is a bunch of sharp
little blades so you might want to ask for help. Remember the
word please goes a long way to making things go smoother in
the kitchen.
Slice the block of tofu in half the long way. Holding the
two halves together turn the block over, one quarter turn so
that you have an uncut side facing up. Slice through the block
the long way again.
Now you can cut through the block the other way, making little
cubes - about 3/4 of an inch by 3/4 of an inch.
Arrange the cubes on a plate. Sprinkle the ginger and the
onions over the top.
Sprinkle the soy sauce over the top of it all and serve.
