These recipes are designed so children can make their mom, step-mom,
grandma or auntie breakfast by themselves. Kids under 8 might
need just a little help here or there.
You'll need:
4 eggs
2 pats of butter
4 tablespoons of water
1/2 cup of Swiss cheese – shredded
1/2 cup of smoked turkey breast – diced
1/2 cup of frozen spinach – defrosted and well drained
Olive oil cooking spray
2-4 slices of whole wheat bread
Equipment:
Measuring cups and spoons
A large heat-proof bowl
A fork or whisk
A serving spoon
Oven mitts or
A trivet or hot pad
A heart-shaped cookie cutter
A plate
Coat the inside of the large bowl with cooking spray.
Break eggs into large bowl.
Add the water, butter, cheese, turkey breast and spinach.
Stir well.
Place in microwave and cook on high for about 4 minutes. Check
after a minute or so to see how fast your microwave cooks.
Using oven mitts to take the bowl out of the microwave. The
egg will be cooked around the sides but the middle will still
be liquid. Scrape the cooked eggs off sides of the bowl and
stir into the liquid. This is the same thing you do when you’re
scrambling the eggs.
While the eggs are cooking in the microwave, set the toaster
on medium low. Put the bread in the toaster and push the lever
down.
Check your eggs again, if they still need to cook, scrape
the cooked eggs away from the sides of the bowl again. Our microwave
took 6 minutes total to cook the eggs.
When the toast pops up, remove it from the toaster and lay
it flat on the counter or plate. Place the cookie cutter on
top of the toast so that the heart shape is all filled in. Press
down firmly until you feel the cutter has gone through the toast.
Pull the extra bread away from the cookie cutter the push the
heart toast out of the middle.
Place the toast on mom's plate. When the eggs are finished,
add a serving next to the toast. This recipe makes 2 adult servings
or 1 adult and 2 child servings
