Orange-Carrot Soup

You'll need:

  • 2 tablespoons of butter
  • 1 cup of onion
  • 6 carrots ­ scrubbed and cut in chunks
  • 2 cups of chicken stock
  • 1/2 cup of orange juice
  • 1/4 cup of toasted smoked almonds - chopped coarsely

Equipment:

  • Measuring cups and spoons
  • Soup pot
  • Blender or food processor
  1. Have your adult helper sauté the onions in the butter, over medium heat, until they are translucent - which means they are slightly see through. If you are old enough to work at the stove, make sure your adult helper stands by to watch. If you have long sleeves, roll them up. Make sure your clothing is far from the flame. The kitchen is not the place for frilly clothes.
  2. Add the carrots, the chicken stock and the orange juice. Turn the heat down and simmer the soup until carrots are tender ­ about 20 minutes.
  3. When the carrots are cooked, turn the heat off. You'll need some adult help to put the soup into a food processor or blender. You can push the buttons.
  4. You're going to "purée the soup" which means to make it smooth, without lumps.You need to do this part quickly so the soup stays warm.
  5. Because the blender jar is tall and tippy, you'll need help getting the hot soup from the blender into the bowls.
  6. Sprinkle the chopped almonds on top of each bowl of soup as a garnish. Serve this yummy soup immediately.

This recipe makes enough for 2 adults and 2 children..
