1 packet Smart Tex Mex* or 1/2 pound hamburger, ground chicken
or turkey cooked with taco seasoning or a mix of cumin, garlic,
oregano and cilantro
Shredded Cheddar or Jack cheese
1 tomato chopped
3-4 leaves of lettuce shredded
A little adult help
Have all your ingredients ready to go, because this recipe
goes together quickly. Open the corn chip bags and have the
cheese and vegetables set out in small bowls.
If you're using ground meat you will need to season it with
taco seasoning and then brown it in a frying pan with a little
olive oil. After the filling is browned, ask mom or your adult
helper to drain off as much grease as possible. If you're using
Smart Tex Mex you only need to cut the top of the bag and microwave
it. Check out the package for directions.
While the filling is still hot, spoon it into the corn chip
bags.
Now put a little cheese into each bag. The hot filling will
melt the cheese.
The lettuce and tomato goes into the top of the bag. Close
the top and give the bag a couple of shakes.
Your Taco-to-Go is ready to eat on the run.
*We've been getting requests from our vegetarian friends to make
a few main dish recipes that they can enjoy. We found Smart Tex
Mex and really liked the flavor. It's soy based and has beans
and Southwestern seasoning. Plus it's low fat and this recipe
already has plenty in the cheese and corn chips. The flavor is
great so you don¹t have to be a vegetarian to enjoy it.
