What could be sweeter than Sweet Potato Pie. This is a recipe is a favorite of families that have their roots in the South. It turns up at all the major holidays because everyone loves it.
{Makes 2 pies}
You'll need:
3 medium sweet potatoes
2 frozen pie shells
1 can sweetened condensed milk
1/2 cup of sugar
2 eggs
1 tablespoon of cinnamon
1 tablespoon of nutmeg
4 tablespoons of butter
1/4 teaspoon of lemon or vanilla extract
A little adult help
Equipment:
A baking pan
Aluminum foil
A large bowl
A hand mixer
A spatula
A cookie sheet

Preheat the oven to 350 degrees.
Line the baking pan with foil. This will make clean up a breeze.
Place the sweet potatoes on the foil and bake 1 hour or until soft.
Take the sweet potatoes out of the oven and peel the skins off. They will be extremely hot so ask for help.
While the sweet potatoes are still hot, put them and all the other ingredients into a large bowl.
Mix with a hand mixer until smooth.
Pour half of the mixer into each pie crust.
Bake for 45 minutes or until a toothpick slid into the middle of the pie comes out clean.
