This recipe was handed down to us from our friend, Anita, who got it from her friend, Jill, who got it from her friend, Kenneth. We lost the trail there. It may have come out of a book, it may be a family recipe.

Whoever made up this recipe was truly an inspired cook because it is yum-mee!

{Makes 10-12 servings}

You'll need:

  • 6 unsalted matzohs
  • 4 Granny Smith apples
  • 1 1/2 cups of raisins or dried cranberries
  • 1/2 teaspoon of ground cinnamon
  • 2 teaspoons of freshly grated lemon peel
  • 1/4 cup of orange juice
  • 1 cup of sugar
  • 1/4 cup of margarine - melted
  • 6 eggs
  • Cooking spray
  • A little adult help

  • A cutting board
  • A sharp knife
  • 2 large bowls
  • A large spoon
  • A 13 by 9 inch baking pan

      1. Set the oven to 350 degrees F.
      2. Ask Dad or whoever is helping you slice the apples into thin, even slices.
      3. Spray the pan and set aside.
      4. Put water in one large bowl. Dip the matzohs for about 30 seconds then shake them off. Crumble them into the other large bowl.
      5. Add all the remaining ingredients. Mix well.
      6. Pour the mix into the greased pan.
      7. Bake for 30-40 minutes or until the top is getting a light brown crust in places.
      8. Take the kugel out of the oven and let it cook for 10 minutes before serving.

This is the kind of dish everyone will look forward to year after year.
