Pad Thai is complicated. So this recipe makes up for it by being so easy.
You don't have to even peel the cucumbers, just give them a good wash.
If
you like it hot, you can add some thin slices of fresh jalepeƱo pepper.
Let your adult helper cut the pepper. Don't rub your eyes if you've
touched the pepper because the pepper oil can really burn.
{Makes 4-6 servings}
You'll need:
3 pickle-type cucumbers - thinly sliced
1/4 of a red onion - thinly sliced
2 teaspoons of brown sugar
1/4 cup of rice vinegar
1/4 cup of fresh cilantro - optional
A little adult help
Equipment:
A large bowl
A spoon
Individual serving bowls
Combine the cucumber, red onion, sugar and vinegar in the bowl and toss until the sugar is dissolved.
Serve in individual bowls. Sprinkle a little cilantro on top if you like.
