These marinated vegetables are a great compliment to our Patriotic
Patties. The take a little less time to cook so once you've browned the
burgers on one side put the veggies on to cook.
{Makes 4-6 servings}
You'll need:
1 ear of corn
6 small potatoes - cut in half
2 zucchini squash - cut in 1 inch chunks
10 cherry tomatoes
4 tablespoons of balsamic vinegar
5 tablespoons of extra virgin olive oil
1/2 teaspoon of fresh ground pepper
1/4 teaspoon of salt
2 tablespoons of oregano
A lot of adult help
for the grill
Equipment:
Measuring spoons
A large bowl
A spoon
Oven mitts
A grill basket or aluminum foil
A pair of tongs
Put all your veggies in the big bowl and pour
in the rest of the ingredients. Set them aside for 30 minutes while you
help prepared the rest of the meal.
Ask your adult helper to fire up the grill if it isn't already going.
if
you're using aluminum foil make a double layered "tray" and pierce some
holes in the bottom every few inches. Spray the grill basket or foil
with cooking spray.
Have the adult put the basket on the grill
and arrange the veggies in it. Make sure the kernel side of the corn is
facing down. Make sure Dad, Mom or whoever is helping you uses the oven
mitts. Burns aren't just for kids, after all.
The veggies will need to be turned after about 5 minutes. This will all depend on how hot the grill is.
Continue
to cook the veggies, turning them every so often until the zucchini
starts to get a little soft and the corn and potatoes have browned
edges.
You can help by holding the serving plate as
your adult helper takes the veggies off the grill. Take them to the
table and dig in.
