Monstrously Good Mixed Bean Soup Print E-mail

Since Halloween is a festival of candies, we like to feature a good, nourishing dinner to eat before the trick-or-treating begins.

This year we chose a make-ahead soup and sandwich combo. This soup has a special ingredient - sprouts!

You would think that sprouts would lose their healthy qualities when they are cooked but our friends at Brassica assure us not one bit is lost. The anti-oxidents are just as potent fresh or cooked. Check out the Brassica website for the facts.

{Makes 6 servings}

You'll need:

  • 3 tablespoons of olive oil
  • 1 cup of onions - diced
  • 1-2 cloves of garlic
  • 1/2 cup of celery - diced
  • 1/2 cup of sweet red or yellow pepper
  • 1 can of red kidney beans
  • 1 can of black beans
  • 1 can of navy beans
  • 1 can of diced tomatoes
  • 1 pound of sweet Italian sausage*
  • 1/2 package of Brocco Sprouts
  • 3-4 cups of chicken or veggie stock*
  • 1/2 teaspoon of black pepper
  • A little adult help


  • A large pot
  • A sharp knife
  • A cutting board
  • A can opener
  • A wooden spoon
  • A ladle
  • Serving bowls
    1. Warm the olive oil in the bottom of the pot, then add the onions and garlic. Sauté softly until the onions are translucent.
    2. Add the celery and sweet pepper. Sauté for another 2 or 3 minutes.
    3. Slice the sausage into 1/2 inch thick rounds. Add them to the soup.
    4. While you are waiting, open the cans of beans. Drain them and rinse them. Add them to the soup.
    5. Next, open the tomatoes and add them, along with their juice, to the soup.
    6. Add the sprouts and stock. You want to add enough stock to cover all the ingredients.
    7. Sprinkle on the black pepper and stir.
    8. Put the lid on the pot and bring the soup to a boil. It should take 15-20 minutes.
    9. Lower the heat then give the soup a stir. Breathe in all that wonderful aroma.
    10. Simmer the soup for an hour, stirring occasionally.
    11. Refrigerate overnight so the favors will really mingle.
    12. Reheat an eat for a quick nutritious early dinner. You'll need the energy to haul those huge sacks of candy home!

    *For a vegan or vegetarian version, leave out the Italian sausage and use veggie stock.
