You don't have to be a vegetarian to love these tasty, tacos. They are great for an after-school snack. Pair them with a green salad and you have a great lunch or dinner.

{Makes 6 small pizzas}

You'll need:

  • 8 corn tortillas
  • 1 can of vegetarian refried beans
  • Shredded lettuce
  • 1 large tomato - chopped
  • 1 small white onion - chopped
  • 1 avocado - sliced and peeled
  • 2 cups shredded Jack or Cheddar cheese 
  • Salsa
  • Plain yogurt
  • A little adult help

Equipment:

  • Microwave
  • 2 microwave-safe bowls
  • A microwave-safe plate
  • A large cutting board
  • Clean dish towel
  • Serving plates
  1. Get all your ingredients ready in advance because basically we're going to be assembling the tacos quickly.
  2. Remove the refried beans from the can, put them in a bowl, place a plate to cover the bowl and heat it in the microwave for a minute or two. Leave the cover on the bowl to keep the beans warm.
  3. Dampen a clean dishtowel. Spread the dishtowel out in a microwave-safe bowl, leaving the ends flopped over the sides.
  4. Place a few tortillas into the bowl and pull the ends of the towel up to cover the tortillas.
  5. Heat the bowl with the tortillas in the microwave for about 30 seconds. You want to steam the tortillas.
  6. Carefully open the towel. The steam coming out will be very hot. Lay the tortilla out on a plate.
  7. Spread 2-3 tablespoons of refried beans down the middle of each tortilla.
  8. Working quickly, add the lettuce, avocado, tomatoes, onion. Fold the tortilla in half.
  9. Now top with cheese and salsa. Put a dab of yogurt on top.
