This is a perfect appetizer at a party or an after school treat. Once you've made it, you can try experimenting by substituting different fruit that's in season.
{Makes appetizers for 6}
You'll need:
2 ripe kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
1 package frozen raspberries
1 package frozen peaches - defrosted and diced
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons apricot preserves
10 flour tortillas
Butter flavored cooking spray
1/4 cup of cinnamon sugar
A little adult help
Equipment:
Cutting Board
Sharp knife
A large bowl
A large spoon
Cookie sheets
Oven mitts
Place the diced fruit in the bowl. Mix.
Add the raspberries, sugars and fruit preserves. Mix again.
Cover the bowl and chill for at least 15 minutes.
While the fruit is chilling, preheat the oven to 350 degrees F (175 degrees C).
Spray one side of 5 tortillas and place them, buttered side down on a cookie pan. Spray the other side.
Sprinkle the tortillas with cinnamon sugar.
Bake the tortillas 8 to 10 minutes or until the edges are browned. Repeat with the rest of the tortillas.
Let the tortilla cool slightly. Transfer them to the cutting board and cut into wedges.
Place the fruit salsa in a bowl. Put the bowl in the center of a plate and arrange the tortilla chips around the bowl.
