This salad was inspired by Liv and Belle's dad, Vince Gerasole. We were trying to come up with recipes for the 4th of July and Mr. Vince said, "What's more American than apple pie?" Livvy pointed out that we'd already done apple pie.

But that started Ms. Gaylon thinking. What's more American than Apple Pie Salad? Why not make a salad with all the things people usually put in apple pie and serve it in a pie plate?

That's how Spatulatta brainstorming sessions go.

{Makes 4-6 servings }

You'll need:

  • 2 slices of whole wheat bread
  • Cinnamon
  • An apple
  • A squirt of lemon juice
  • 1/4 cup of walnuts - optional
  • 1/4 cup of raisins - optional
  • Cheddar cheese
  • 3 tablespoons of apple cider vinegar
  • 2 tablespoons of honey

Equipment:

  • A small bowl
  • 2 9-inch pie plates
  • A knife
  • a potato peeler
  • A cutting board
  1. Toast the bread. Sprinkle it with cinnamon and cut it into cubes.
  2. Pour a cup of water into the bowl and squeeze or squirt a little lemon juice in. This is a bath for the apple slices so they don't turn brown when the oxygen in the air hits the newly cut surfaces. (Just a little science on the side: This is oxidation. It's similar to rust on metal.)
  3. Slice the apple thinly and put in lemon water bath for about 30 seconds. Drain them and set aside.
  4. Arrange the greens in the pie plate.
  5. Arrange the apples on top of the greens.
  6. Now you can add walnuts and raisins. Or not. It's whatever you would like in your salad.
  7. We used the potato peeler to shred the cheddar cheese into curls on top of the salad
  8. Make a dressing with the vinegar and honey and drizzle on top.
