Our friend Nicole at Traughber Middle School came up with this recipe for Lox Roll-ups. Quick and delicious, they make a great appetizer, snack or an entreƩ on a buffet.

Liv and Belle were invited to do a cooking demo and book signing at Traughber and the students there put together the "Taste of Traughber Cookbook" as a gift. We chose 5 recipes that made up a complete meal. But there are lots and lots more! Our thanks to Nicole, all the other students who participated and to Ms. Loretta Burke their teacher who organized the event. Great job!

{Makes 4 servings }

You'll need:

  • 4 whole wheat tortillas
  • 2 tablespoons low fat cream cheese
  • About 12 smoked salmon slices
  • Fresh dill
  • Capers
  • red onion rings
  • A half lemon


  • A butter knife
  • Toothpicks
  1. Spread the cream cheese on the tortillas
  2. Put on the smoked salmon, dill, capes and onions. Don't forget to squeeze on some lemon!
  3. Carefully roll up the tortillas and then cut them int bite-sized pieces.
  4. Secure each piece with a toothpick to stop it from unrolling. You'll love this delicious snack!
