Carrot and Honey Salad Print E-mail

Bright orange, slightly tangy and a little sweet, this carrot and honey salad pairs well with the creaminess of our Fetticcini Alfredo with Spinach.

{Makes 6 servings}

You'll need:

  • 3-4 large carrots - thinly sliced
  • 3 tablespoons of lemon juice
  • 1 tablespoon of olive oil
  • 1 teaspoon of honey
  • A little adult help

Equipment:

  • A large bowl
  • A vegetable steamer
  • Measuring spoons
  • A pot with a lid
  • Hot pads
  • A large spoon
  1. Steam the thinly sliced carrots until tender but not soft. Remove from steamer and let cool. Toss once to release trapped heat.
  2. In a mixing bowl, add the lemon juice, olive oil and honey. Mix well.
  3. Add the carrots to the mixing bowl, toss until coated then serve.
