A petit four is a small decorated cake. Since Valentine's Day already has plenty of sweets, we decided to take the petit four in a different direction and made it a sandwich for our holiday lunch.

We're using pumpernickle bread because it looks like chocolate cake, we used food coloring to turn mayonnaise into frosting and cut sliced pickles into hearts to form "jewels."

We chose hickory smoked turkey at the deli because it was pink. Ham is a good substitute if you eat pork. You can ask for the turkey and cheese to be cut thicker at the deli.

We found dill pickles sliced the long way as sandwich slices but mom or dad can slice them for you. The Heart in Heart cookie cutters used in the video are available in our on-line shop.

We also made a mini-version using only the small cookie cutter and placed them in pleated paper cups. They looked like a box of chocolates!

{Makes 6 sandwiches}

You'll need:

  • 6 slices of pumpernickel bread
  • 1/2 pound of maple smoked turkey - sliced thick
  • 1/2 pound of white cheese - sliced thick
  • 5 drops of red food coloring
  • Canola mayonnaise
  • Mustard
  • 2 large dill pickles
  • 1 small jicama
  • 1 sweet red pepper - cut in wide strips
  • 1 packet of Brocco Sprouts
  • A little adult help

Equipment:

  • 2 Heart-shaped cookie cutters - large and small
  • A small bowl
  • A tablespoon
  • Scissors
  • A sandwich bag
  1. Cut the bread into heart shapes with the large cookie cutter. If the slice of bread is large enough you may be able to get 2 hearts out of each slice. Any edges can be cut and toasted for croutons and used with soups or salads.
  2. Next cut the turkey and cheese with the large cutter.
  3. Ask your aunt or the adult who is helping you to slice the dill pickles into slices the "long way," about a 1/4 inch thick. Do the same with the jicama.
  4. You can cut hearts out of the pickle, jicama and red pepper slices using the small cookie cutter.
  5. Arrange the sprouts around the sandwich like lace. Decorate with pepper and jicama hearts.
  6. Spread a little mayonnaise or mustard on one side of the heart-shaped bread and position it on the bed of sprouts.
  7. Add a layer of turkey, a layer of sprouts, and layer of cheese. Top with another heart shape of bread.
  8. Decorate with your pickle hearts.
  9. Start with 3 tablespoons of canola mayonnaise and add the food cooling drop by drop, stirring as you go, until you have the desired color of pink. Scoop the mayo into one corner of the sandwich bag.
  10. Cut a small bit of the corner of the sandwich bag off. Squeeze the mayo out a little at a time to decorate the top of your sandwich.
