When making your Valentine's Day dinner you will want to start the rice first because it takes the longest to cook. Jasmine rice has a fragrance and fine flavor different from any other rice. Check the back of the package for the cooking time - it might be different from the brand we used.

{Makes 6 servings}

You'll need:

  • 1 cup of Jasmine rice - available in the Asian section of most large grocery stores
  • 1 cup of chicken stock
  • 1 cup of water
  • 1 tablespoon of olive oil
  • A dash of salt and pepper
  • 3 tablespoons of chopped parsley
  • Non-flavored cooking spray

Equipment:

  • Measuring cups and spoons
  • A medium size pot with a heavy bottom and a tight fitting lid
  • A rice paddle or large wooden spoon
  • A small heart-shaped mold - we used cup cake pans
  • A spatula
  • Hot pads or oven mitts
  • Dinner plates
  • A little help from an adult or older sibling
  1. Put the pot on the stove.
  2. Measure the rice, the chicken stock and the water into the pot.
  3. Add the olive oil, the dash of salt and pepper. Give it a stir.
  4. Cover the pot and turn the heat on to medium.
  5. Cook for 20-25 minutes or according to the directions on the package.
  6. When the rice is done cooking take it off the heat.Take the lid off the pot and let the rice cool until you can handle it safely.
  7. Meanwhile prepare the heart-shaped molds. Spray them lightly with cooking spray and use your fingers to get into all the corners.
  8. Using your rice paddle or wooden spoon, stir the chopped parsley into the rice.
  9. Next, pack the rice into the molds. Press the rice in firmly so it fills out the heart shape.
  10. This next step might require some help, depending on how big your hands are. Place a dinner plate, top side down, over the mold. Holding onto both the plate and the mold flip them over. This is something two people can do together if they count one, two and flip on the count of three.
  11. Lift the mold. The rice should slide out in a heart shape. If it doesn't tap it lightly.
  12. Gently place a serving of chicken sauté next to the jasmine rice heart and use a sprig of parsley as a garnish.
