start the day with a "heart-y" breakfast of Baked Oatmeal with dried
cranberries for the dash of heart-stopping red.
We're
making our oatmeal in heart-shaped foil cups but it is traditionally
made in a large pan. We used old-fashioned oats because they give the
dish a better texture.
It's a great recipe for
sleep-overs, brunches or when family comes to visit because it goes
together in minutes and bakes while you pour the orange juice and set
the table.
Because most of the ingredients
don't need to be exact, pre-schoolers can do the measuring and
stirring. They probably will need a little help with the baking powder
and vanilla.
{Makes 4-6 servings}
You'll need:
3 cups old-fashioned or quick oats
1 cup of brown sugar
2 teaspoons ground cinnamon
2 teaspoons of baking powder
1 cup milk
2 eggs
1/3 to 1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup of dried cranberries
Strawberries for garnish
A little adult help
Equipment:
Measuring cups and spoons
A large bowl
A wooden spoon
A silicon spatula
9 X 9 baking pan
A toothpick
Pre-heat the oven to 350 degrees F (175 degrees C).
Measure all the dry ingredients into the bowl and mix.
Beat the eggs and add them, the milk and the butter to the bowl and mix again.
Grease the bottom and sizes of the pan.
Pour the mixture into the pan.
Place pan in oven and bake for 35 - 40 minutes or until a tooth pick comes out clean.
