This salad for Valentine's Day dinner uses up any veggie bits you might have cut up for the lunch sandwiches.
The
carrot was to hard to cut with the cookie cutters so we worked out a
method to shape so it could be cut in slices. This is definitely an
adult task.
We served the salad with raspberry-vinegrette dressing.
Adult task
- Cut the carrot into manageable chunks about 2-3 inches long. Start
with the thickest chunk on its widest end. Make sure it's stable. Once
you have the method you can move on to the narrower part of the carrot.
Adult task - Visualize the round as 4
quarters. Using a very sharp knife, cut the round edge off one quarter.
Do the same to the adjacent quarter. Now you should have a half-round
carrot with a large "V" shape at the bottom.
Adult task
- Notch a small "V" directly across from the large "V" and you should
see the heart taking shape. Trim the edges of the notch to round them.
Turn the carrot on one of the flat sides and make thin slices.
Child task - Cut hearts out of the jicama and red pepper slices using the small cookie cutter.
Child task - Arrange the greens and sprouts on the salad plate. Decorate with carrot, pepper and jicama hearts.
