Our friend Joe came up with this idea. A sandwich that looks like a
carved pumpkin. The toughest part was finding the round orange cheese.
Look at your deli counter.
We found that it was best to put
the tomatoes under the turkey and cheese if you want that smooth round
face on your pumpkin. Our first try with the tomatoes directly under
the cheese gave our pumpkins a bit more character.
Each sandwich starts with 1/2 a roll or bun. Put the bun on a plate and spread with mayo or mustard. We've even tried a little pesto.
Add tomatoes, sprouts, onions, peppers. You decide.
Cover with a slice of turkey, then a slice of cheese.
Microwave the sandwich until the cheese just starts to melt. We started with 30 seconds then cooked the sandwich for an additional 10 seconds at a time. Our oven took 50 seconds but ever oven is different.
Be careful as you take the sandwich out of the oven.
Next add a bit of celery stalk for the pumpkin's stem and use the olives and veggies to make a face. Each one will be unique!
Pair with a cup of bean soup and you've got a great little meal to keep you going on a dark and spooky night!
